Peppered Venison Tournedos

2x Venison Silverside Eyes
6- 9 slices Continental Bacon
Sauce
Gravy mix
1 sml tin Peppercorns
½ cup Cream
2 tblsp Plum Sauce
Cut the silverside eyes into medallions about
1 inch thick, carefully wrap each medallion in a piece of bacon, place 2 - 3 medallions each on a skewer. Preheat pan or bbq
with a little olive oil. Medallions must be cooked hot and fast and are best to serve rare - medium. Make the gravy as you
would normally using the juices from the pan and add peppercorns, cream and plum sauce. Serve on skewer with a generous serving
of sauce.
